Barbounia - small, prized Mediterranean red mullet commonly found in Greek waters. Recognizable by their reddish-pink color and delicate flesh, they have a mildly sweet, rich flavor. At Andros Taverna, we lightly fry the whole barbounia until crisp, then serve them simply with lemon and sea salt. Andros Taverna flies barbounia in directly from Greece and is the only restaurant in Chicago serving them.
