SAM BARON
Chef and co-owner of The Fat Shallot, Sam Barron has been passionate about cooking since childhood, beginning his culinary journey before he was even tall enough to see over the stove. His professional career started in Chicago at the acclaimed four-star Everest Restaurant, followed by time in Spain at a three-Michelin-star restaurant, where he refined his technique among some of the world's best chefs.
Driven by a desire to learn from every corner of the culinary world, Sam traveled throughout Europe and Asia, working on small local farms, immersing himself in regional cuisines, and discovering the vibrant street foods that continue to inspire his cooking today. His journey then led him to New Orleans, where he cooked professionally while developing a deep appreciation for the city's rich food culture and bold flavors. Before launching his own venture, Sam served as sous chef at Chicago's iconic Pump Room.
Together with his wife and business partner, Sam returned home to Chicago and founded The Fat Shallot, transforming a simple idea into one of the city's favorite sandwich destinations. What began as a single food truck has grown into a thriving local brand with two food trucks, food hall locations at Sterling Food Hall and The Mart, brick-and-mortar restaurants in Lincoln Park and Evanston, and a seasonal beach stand in Wilmette.
For more than 13 years, Sam and and Sarah Weitz have combined their culinary expertise with a passion for approachable, high-quality food, serving made-to-order classic sandwiches with a modern twist. Whether guests stop by for a signature sandwich or one of The Fat Shallot's refreshing slushies, they're treated to the same commitment to flavor and hospitality that has defined Sam's career from the very beginning.
