 Executive Chef Raul Polidario leads the culinary program at The Prospect, an elevated neighborhood restaurant in Mount Prospect, Illinois. A lifelong food enthusiast who began cooking for his family as a child, Raul has built an impressive career spanning private country clubs, acclaimed restaurants, and a decade with the Chicago Yacht Club, where he advanced from Executive Sous Chef to Executive Chef. Today, he brings that extensive experience, technical expertise, and passion for hospitality to The Prospect, creating menus that balance classic steakhouse traditions with innovative flavors and seasonal ingredients. 

Known for his collaborative leadership style and creative approach to menu development, Raul believes great food should tell a story. Drawing inspiration from his former life as a performing rapper, he often compares building a menu to crafting a great song—every course must have rhythm, purpose, and flow. Under his leadership since 2024, The Prospect has become a destination for thoughtfully executed cuisine, exceptional guest experiences, and a culinary culture rooted in mentorship, creativity, and continuous growth.
