The Drawing Room
The Gold Coast’s preeminent culinary cocktail lounge, the Drawing Room, continued to elevate its dining experience with the appointment of executive chef Tommy Sheean in 2013. The former Drawing Room sous chef brings to the head of the kitchen a fresh palate, one which possesses a keen understanding of its evolution and an inspired vision of its future. Tommy, an Atlanta native, held positions at Boka and Signature Room following academia at Kendall College. His next spell at the Drawing Room under the tutelage of the previous executive chef, Rodney Staton, is where Tommy fine-tuned his craft. Together, Rodney and Tommy earned the Drawing Room three forks in the 2013 Michelin Guide, putting its food program on the map alongside its famed beverage program.
Tommy has a passion for the Drawing Room’s bar. Under his new direction, Tommy plans to marry the kitchen with the bar more often, establishing dishes to aptly pair with drinks, and themed dinners such as the recent “Taste from Home,” when he and the Drawing Room’s master bartenders teamed up and used Wisconsin traditions to inspire a multi-course menu with paired cocktails (note: Tommy attended University of Madison where worked in several local kitchens which led to him pursuing a career as a chef).
Regarding his style, Tommy says he’s “happiest cooking Southern comfort food (i.e. Soul Food), but enjoys the challenge of finding ways to translate those dishes into a fine dining atmosphere.” As a result of working alongside Rodney at the Drawing Room, whose menu can be described best as seasonally-inspired progressive American with global influences, Tommy also loves Spanish and Mediterranean flavors, and will search for new ways to blend traditional Southern dishes with worldly touches. He says his “aim is to surprise them with amazing food when they come in for the Drawing Room’s legendary cocktails.”
