Chef Saul “Diablo” Chavez was born in Chihuahua, Mexico. His love for cooking started in 1997 when he got his first job in a kitchen. At first, cooking was just a job to pay bills but, Chef Chavez began to develop a love for food. He fell in love with the flavors and creating new dishes. For the next 20 years, Chef Saul dedicated his life to working at well-known Mexican restaurants and helped them create new menu dishes. He earned his nickname, Diablo, for working many hours and coming into work with red, tired eyes but never missing a day. .
In 2016, Chavez met Jose Barajas through mutual friends and they developed a partnership. Chef Saul worked at Jose’s first restaurant, El Solazo in the South Side of Chicago while helping develop a menu for Jose’s second restaurant, La Josie. La Josie opened May 5th, 2017 on Randolph St. Chef Saul Chavez continues to work in the kitchen creating new, seasonal dishes with rich flavors, and authentic Mexican taste.
