The Violet Hour
A West Coast native, Rachael Thompson has called Chicago home since 2000 when she began studies at the University of Chicago. It was during her studies abroad in Sevilla, Spain that Thompson’s interest in wine and Spanish flavors were sparked. After graduating with a degree in Comparative Literature, she continued on to pursue a Master’s Degree in 2007. She put her degree and language skills to use the following year as an adjunct Spanish Instructor at Kendall College. However the pull of the Caribbean restaurant she was working at on the side, with its mojitos and caiparinhas, was too great and she decided to go all-in for the world of food and drink. Stints at a wine and spirits shop, as well as craft beer bar Fountainhead expanded her knowledge.
In the spring of 2011, when an opening as a server’s assistant arose at The Violet Hour, she jumped at the opportunity. Her hard work and expansive wine and beer knowledge didn’t go unnoticed, and she was quickly promoted to Wine and Beer Buyer. While still a server, but always eager to learn and experiment with flavors, Thompson contributed cocktails and punches to the acclaimed bar’s menu. However, in 2013, she began bartending and has not looked back.
