Growing up in New York, Chef Michael (Mike) McCants tapped into his Jamaican roots to create an authentic cooking style that hones cultural heritage, as well as integrates new flavors and cooking techniques to create expressive dishes. Through his approach to cooking, Chef McCants has married his vast knowledge of creative cooking across Chicago, with the integrity of the Delta region into every dish the restaurant serves.
Prior bringing his culinary talents to The Delta, Chef McCants worked his way up the ranks from line cook, to sous chef and beyond in some of Chicago’s most reputable restaurants including, Trenchermen, Cold Storage, Income Tax, and Hearth. Since his time at The Delta, Chef McCants has had several his dishes highlighted in prominent local media, including The Chicago Tribune, Redeye, Chicago Magazine, The Infatuation, and more.
