A native Chicagoan, Chef Mark Brand developed his love of cooking from his mother Nora. He began his career working in several area kitchens then decided to make a move to the construction industry. At age 21, his mother Nora passed away inspiring Chef Mark to pursue his true passion of cooking. He then quit his construction job to attend Le Cordon Bleu at the Cooking and Hospitality Institute of Chicago. Fresh out of culinary school he began at Four Seasons Chicago. Working for a world renowned hotel chain allowed him to experience all the creative outlets that were available in the culinary world and motivated him to keep expanding his career path. He was able to further develop his skill set in the classical French style of cooking.
When the opportunity arose to move to a new, small, boutique property he decided to take it. He became the Banquet Chef at the Wit Hotel Chicago. Chef Brand made it his mission to tailor every banquet function to personalize the client experience. In doing so, he learned to cook every type of cuisine from Indian to Japanese. From VIP private parties that required chic trendy fare to elegant weddings that called for perfect classic plates, Chef Brand was always delivered.
After three and half years he decided it was time to challenge himself once again. He is excited to be able to put his culinary stamp in a restaurant setting for the first time as Chef De Cuisine at Hilton Chicago’s main restaurant, 720 South Bar and Grill. Chef Mark is focused on sourcing as many locally farmed products as possible and showcasing the amazing meat and produce the Midwest has to offer.
