Kymberli DeLost joined Billy Lawless’s iconic restaurant group in February 2015. As Executive Pastry Chef DeLost oversees the pastry program for Acanto, The Dawson and The Gage. She adds a mecca of culinary experience from several acclaimed Chicago Kitchens, including: Hot Chocolate, Japonais, Takashi, Storefront Company and West Town Bakery.
Just one year before graduating from DePaul University, DeLost realized that even though the path she was on would have been easier, it didn’t intrigue her as much as the craft of food and art so she turned her focus towards culinary school. After graduating with a degree in culinary arts, DeLost was given the opportunity to work in pastry at Chicago’s renowned Japonais. Knowing little about pastry and even less about Asian cuisine, DeLost spent every moment of her free time in the kitchen, learning all she could. Her hard work paid off when she was promoted to Pastry Chef.
Following her time at Japonais, DeLost worked for Chicago’s elite restaurants and chefs, eventually earning her a position at the James Beard Award-winning chef Mindy Segal’s Hot Chocolate. DeLost spent one year at Hot Chocolate before joining the Lawless team.
