Jasenko Ceric, Dry Cure Master at Volpi Foods, has been a student of charcuterie for more than 25 years. Starting off, Jasenko apprenticed under the keen eye of Armando Pasetti, Volpi Foods, and continued his learnings with Lorenza Pasetti, an innovator in old-world processes, prior to achieving his Master Salumiere status. Ceric continues to be instrumental in leading industry-wide initiatives for sustainable farming and high-yield butchering.
