Pecking Order

Kristine Subido is the chef and owner of Pecking Order in Chicago, where she puts a playful spin on the Filipino food of her youth. She was born in Manila, Philippines and moved to Chicago at age 9.

Subido opened Pecking Order in 2012 with her mother, Melinda, after a decade-long tenure as executive chef at the Mediterranean-inspired Wave restaurant in the Chicago W Lakeshore, where she became known for her global approach to cooking and affinity for spices and big, punchy flavors.

A graduate of Chicago’s Kendall College, Subido worked the line at Spiaggia, the renowned Italian restaurant in Chicago, before joining the kitchen at Mango under chef and mentor Steve Chiappetti. She helped open Grapes and Rhapsody, Chiappetti’s other critically acclaimed restaurants, and assisted him at the prestigious Bocuse d’Or competition in France. Subido moved on to work for the Kimpton Hotel group and then the Cornerstone Restaurant Group, which opened Wave in 2002.

In 2008, the New York online culinary magazine named her one of Chicago’s 12 “Rising Stars.” Subido was the lone Chicago chef tapped to cook at the gala reception for the 2011 James Beard Awards. Her grilled chicken adobo was the cover image of Food & Wine magazine’s September 2013 issue, and her recipe — a variation of a family recipe — ran inside.

Subido has made numerous television appearances, and her recipes and Pecking Order restaurant have been written about in Bon Appetit, Chicago Tribune, Chicago Sun-Times, Chicago magazine and websites and blogs including Serious Eats, Eater and Tasting Table.
