Donald Penza


Executive Chef, Donald Penza is a graduate of The International Culinary School at The Illinois Institute of Art - Chicago. His background includes nine years of restaurant experience.  In addition to being the opening Sous Chef for the Municipal Bar & Dining Company, Donald has also been an integral part of opening The Frontier, as well as two rooftop venues in Wrigleyville.

He has also gained substantial knowledge while working under top Chefs in Chicago, by whom he is well respected. His passion is in the Gastro Pub dining scene, however he has extensive culinary talents. The Municipal Bar and Dining Company has given Donald the opportunity to participate in the 6th Annual Chicago Gourmet presented by Bon Appetit and From The Chefs Table, The 36th Annual Restauranteurs Event benefitting the Illinois Restaurant Association Educational Foundation's Scholarship Initiative.

Donald aspires to be a well-known respected Chef in the Chicagoland area, not only for his culinary expertise, but for his management style and ability to work with and lead his team to success. He has a hard work ethic and easily adapts to any situation.  Competition and the desire to be successful, all while delivering the best product around, are what drives him.

Chef Donald is 24 years old and is originally from Woodstock, Illinois where he was raised in the industry. He considers the opportunity to showcase his creations at The Municipal Bar and Dining Company, a gateway to this magnificent culinary city.
