MIKE MORALES
Chef Mike Morales is the Culinary Director of Sunda New Asian, overseeing the culinary vision and operations across the brand's locations in Chicago, Nashville, Tampa, and Detroit. A proud Filipino American, Mike has been with Sunda since its inception, rising from the kitchen of the original River North location to become one of the leaders behind the brand's growth and success.
After earning an Associate's Degree in Culinary Arts from the Illinois Institute of Art in 2006, Mike joined Rockit Ranch Productions in 2009 and grew through the ranks at Sunda. Today, he leads menu development, culinary training, quality standards, and new restaurant openings, helping ensure every guest experience reflects the creativity, consistency, and cultural authenticity that define the brand.
Deeply inspired by his Filipino heritage and the diverse cuisines of Southeast Asia, Mike's culinary philosophy is rooted in honoring traditional flavors while presenting them in a modern, approachable way. He is passionate about introducing guests to Filipino cuisine through signature Sunda dishes like Chicken Inasal, Lumpia, and the communal Kamayan Feast, all of which celebrate the culture and hospitality that shaped his love of food.
Outside the kitchen, Mike finds inspiration through travel and exploring new restaurants. He enjoys spending time with his dog, has recently become an avid golfer, and serves as a Board Member of Culinary Care, a nonprofit that provides complimentary meals to cancer patients in need.
For Mike, food has always been about connection. Some of his favorite childhood memories revolve around family gatherings and time spent in the kitchen, where he first learned that cooking brings people together. That belief continues to guide his work today as he mentors young chefs, develops new menus, and creates memorable dining experiences for guests across the country.
