Founded in 1975 by Inocencio Carbajal aka “El Guero”, Carnitas Uruapan is the legendary destination for those whose palates crave authentic Carnitas from Michoacan, Mexico. It’s no secret that Inocencio’s hard work, passion for Mexican flavors, and courage have made him a local favorite in Chicago’s Pilsen neighborhood, where he opened the first restaurant 50 years ago.

Carnitas Uruapan has created a successful brand story, featured in a variety of media outlets, including Netflix, The Food Network, VICE, The Cooking Channel, and PBS by consistently making sure the family recipe remains true to its Mexican heritage, unmodified for the American market in any way.

After a successful career of almost 8 years in finance, and after having completed a master’s in business administration (MBA) from the Kellogg School of Business, Marcos Carbajal returned to the family business with the vision of growing the brand and expanding the business throughout the various latino neighborhoods in the City of Chicago. After a successful expansion into a second location in Gage Park in 2019, the expansion continues with a newly opened flagship location in Little Village that opened in January 2025. Marcos was nominated as a James Beard award semifinalist for outstanding restaurateur in 2024.
