JOSE SOSA
Raised on his grandparents' farm outside Mexico City, Chef Jose Sosa developed a deep respect for nature, quality ingredients, and hard work early on, values that still define his cooking today. Moving to Chicago as a teenager, he began his culinary journey at Rosewood Restaurant, launching a career that spanned some of the city’s most iconic kitchens.
Chef Sosa spent 18 years with Gibsons Restaurant Group, advancing to executive chef roles at Hugo’s Frog Bar & Fish House, LUXBAR, and Gibsons Italia. At Gibsons Italia, he combined authentic Italian traditions with Chicago’s steakhouse culture, elevating the restaurant into a premier dining destination with a focus on globally sourced, top-quality ingredients. Most recently, he served as executive chef at UMMO Chicago, an award-winning contemporary Italian restaurant in River North from MICHELIN-Starred Chef Carlos Gaytán.
His partnership with The Greggory, a wood-fired, modern American restaurant serving prime cuts of beef, fresh seafood, and homemade pastas, marks a homecoming, reuniting him with Bill Veremis (Rosewood Restaurant), RL Restaurant) and Gregg Horan (Gibsons Restaurant Group) to bring world-class dining to the suburbs. Less than a year after opening, in November 2025, the restaurant was named No. 33 on the “50 Best Steak Restaurants in North America” list from World’s 101 Best, and in May 2026 was named “Suburban Restaurant of the Year” by the Chicago Tribune. The recognition reflects Chef Sosa's emphasis on live wood-fired grilling and his trusted network of boutique farms and purveyors, ensuring every dish reflects his commitment to excellence. Outside the kitchen, he enjoys traveling, exploring culinary institutions, and spending time with his wife, Vivian, and their son, Alessandro.
