John Avila is one of Chicago’s most notable Indonesian chefs. His experience spans acclaimed kitchens like Sofitel, Four Seasons, The Duck Inn, Gibsons Italia, and other restaurants around the world. Inspired by his mother’s home cooking, he co-founded Rendang Republic to bring the bold flavors of Indonesian cuisine to a wider audience. 

He is passionate about food that tells a story rooted in tradition, identity, and family. John leads the culinary vision behind the brand, blending authenticity with creativity to reimagine Padang dishes for a new generation.
