Joe Scroggs is a native of Chapel Hill, NC and the owner of The Roost Carolina Kitchen, recently named by multiple local food critics as the best fried chicken in Chicago.
Growing up he split his time working in kitchens and working under hoods in his father’s garage. Eventually, it would be the convergence of these two paths that lead to the founding of The Roost Food Truck. Launched in March 2012, The Roost was Chicago’s first mobile fried chicken shack, boasting one employee (Scroggs) and a menu consisting solely of fried chicken, buttermilk biscuits and coleslaw. Since then, with a continued focus on simple traditional Southern recipes and cooking techniques, a ground swell of customer support and a slightly expanded menu, The Roost has laid down roots. In April 2014, Scroggs opened The Roost Carolina Kitchen, his first restaurant. Originally conceived as a hub to expand his food truck operation, the Carolina Kitchen has taken on a life of its own and is now a destination for the best damn chicken in Chicago.
