Chef Mariela Bolaños discovered a deep passion for cooking at a young age throughout her years of travel to Mexico with her family. She was inspired by the rich culture and native ingredients that every state had to offer. While in high school, she developed her culinary skills early and truly began her culinary career in Munster, Indiana while working in a small cafe in 2003.
After graduating from the Illinois Institute of Culinary Arts Chicago in 2006, Chef Bolaños secured her first professional kitchen job under celebrity Chef Steve Chiappetti. Under his expert tutelage, she developed her talents in classic Italian and French cuisines.
In 2005, Chef Bolaños became a line cook at Viand in Chicago and quickly worked her way up the ranks to sous chef and then to executive chef. While at Viand, Chef enjoyed creating a fusion menu that showcased her love of different cultures and local product.
Chef Bolaños went on to become the executive chef at Landry’s Corporation and then to Bar Siena, where she was the executive sous chef.
Currently, Chef Bolaños is the Executive Chef for MAD Social, the first Stefani’s restaurant in 14 years. At MAD Social, she has created a globally inspired menu with a New American twist that offers something for everyone.
