Justin Perdue comes to LM Restaurant with more than five years experience working in some of Chicago's finest kitchens. Perdue’s robust culinary resume includes prestigious stints at NoMi, Topolobampo, Old Town Brasserie, and most recently, Sixteen at the Trump International Hotel & Tower. After graduating from the French Culinary Institution in New York, Perdue kicked off his culinary career with Food Network celebrity chef Bobby Flay, at Bar American in 2005.
Justin brings a focus on balance, style and sustainability to the authentic French fare at LM. His goal is to include five taste and flavor components in each dish: crunchy, sweet, acidic, body and balance. Patrons can expect a reinvigorated LM menu from Chef Perdue, complete with a monthly four course menu, modern cooking techniques and a contemporary presentation style.
Originally from Algoma, Wisconsin, Justin's mid-western roots shine in his love for a sharp cheddar sandwich with sweet pickles and mayo.
