Patrick Quakenbush


Patrick Quakenbush – aka “Chef Quak” – was born in Sycamore, Ill., to an Air Force family, and spent his first 10 years in Wiesbaden, West Germany. His European travels during his formative years introduced him to numerous cultures and exotic tastes that shaped his love of food. 
Patrick returned to the U.S. to pursue a degree in Restaurant Management at Ohio State University while simultaneously working at Dalt’s American Grill, owned by Friday’s. While there, he earned the President’s Award for Excellence and became an In-Store Trainer. 
Chef later moved to Orlando, Fla., and joined Planet Hollywood Walt Disney World as sous chef. For four years, he prepared meals for 6,000 people per day, an experience that taught him how to handle pressure and overcome odds.  He earned “Chef of the Quarter” four times with a Silver Star, and went on to open sister restaurants called All Star Café in Las Vegas, Nev. and Melbourne, Australia. 
He then followed his General Manager to Jimmy Buffets Margaritaville at Universal Studios Florida. In this new role, he ran both kitchens and opened another Margaritaville in Ochoa Rios, Jamaica, earning Manager of the Year (The Top Conch). He then joined NBA City at Universal Studios for the opportunity to be Executive Chef. Chef believes this particular experience helped to fine-tune his culinary talents and skills. 
Quakenbush left the theme park industry in 2005 and joined Fleming’s Prime Steakhouse & Wine Bar in Sarasota, Fla., as Chef Partner, and later led the Company’s flagship restaurant in Chicago.
Chef Quak became the Executive Chef at ZED451 in July 2009. At ZED, he directs a team of 15 chefs on any given night and is responsible for the culinary prowess of the restaurant, rooftop and lounge.
