Chef Elton Ambrose brings a global perspective and deep personal passion to his role as Executive Chef at Fairmont Chicago, Millennium Park. Originally from St. Lucia, his culinary journey began at his mother’s side in their home kitchen and led him to earn a degree from Johnson & Wales University in Miami. He has since refined his craft at esteemed properties including Fairmont Jasper Park Lodge, The Ritz-Carlton Boston Common, and Fairmont Scottsdale Princess. Now in Chicago, he channels his experience and heritage into Toro by Chef Richard Sandoval, the hotel’s Latin-inspired restaurant—a natural extension of his culinary roots, where bold flavors, seasonal ingredients, and a love of hospitality come together to create memorable, shareable dishes.
