COLIN JONES
Colin Jones is the head sommelier at Chicago’s brand new Adalina Prime. His journey through hospitality started humbly, scooping ice cream. Since then, he has worked nearly every position in a restaurant, except for cooking. Before Adalina Prime he opened Prime & Provisions as a floor sommelier eventually being promoted to general manager in late 2020. From there he took a brief hiatus from restaurants to see the other side of the wine business by working for a couple wine distributors. Now happily back into the restaurant world Colin will continue his wine studies and advance his wine certifications. He currently is a Certified Sommelier through The Court of Master Sommeliers – Americas and has attended their Advanced Sommelier Course. He is actively working towards his WSET Diploma.
