Jon Ruiz began his career at The Underground in 2013 as the Head Mixologist. Prior to joining The Underground, Ruiz worked as a Beverage Director at Hubbard Inn and as a Sous Chef at Sushi Samba.
As Head Mixologist, Ruiz is responsible for overseeing the entire elevated beverage program at The Underground. He manages the two-part conceptual process beverage program that compliments the duality of the updated club space and oversees the progressive set of beverage offerings including the complete selection of champagnes and specialty cocktails. His constant focus is finding innovative ways to utilize fresh ingredients to create a perfectly balanced final product.
In his spare time, Ruiz enjoys discovering locally sourced and sustainable ingredients that can be utilized in beverages by visiting Farmer’s Markets around the country as well as seeking new beverage trends.
Ruiz graduated from Depaul University with a Bachelor’s Degree in Business Management and Psychology and utilized the culinary and mixology skills he learned while holding various positions in restaurants throughout Chicago to become a self-taught bartender.
