Unite Urban Grill

Executive chef Trevin VanDyke joined the opening team at Unite Urban Grill and serves as executive chef for the West Town restaurant. In this role, Trevin is responsible for menu development, including seasonal menu changes to the restaurant’s offerings of modern comfort fare, as well as managing food and labor costs and the kitchen staff.


Trevin’s culinary approach focuses on simple food that is very well-executed and champions the use of high quality ingredients combined with skilled technique. While growing up, Trevin’s mother fueled his interest in the culinary industry with the large family dinners she would prepare as well as introducing him to wines from across the world. Traveling abroad solidified Trevin’s decision to become a chef as it allowed him to discover many new and intriguing cuisines and techniques to explore.


Trevin’s career began at a young age, gaining experience as a dishwasher and sous chef in a variety of restaurants. A Chicagoland-native, Trevin attended New Trier high school and received a culinary arts degree from the Secchia Institute for Culinary Education in Grand Rapids, MI. Most recently, Trevin served as head chef of Sages Café in Salt Lake City, Utah, followed by Anthem in Chicago.


Outside of the kitchen, Trevin enjoys spending time with his dog Roxy and a variety of outdoor activities, including fishing, hiking and camping.
