Saul Roman was born in Cuernavaca, Mexico, better known as the “City of Eternal Spring”. Saul started his career in Mexico City, with a focus on Mexican cuisine. During his time in Mexico, he worked in several high-end restaurants and hotels. With 19 years of culinary experience under his belt, he decided to move to Chicago. Once in Chicago, Chef Roman helped open several different Mexican restaurants in the area, some of which include Salpicon, Zapatista and Adobo Grill. His mission for these restaurants is to showcase new flavor profiles and create imaginative dishes, while conserving traditional Mexican values
