Chef Matt Ayala attended culinary school in Atlanta, GA before moving to Chicago to begin his professional career. Ayala worked in the kitchen at Quartino and quickly worked his way up to sous chef within a year. Since he has worked at Gilt Bar, Schwa, and Moto. Ayala was named one of Zagat’s 30 under 30 in 2013 and continues to impress the culinary community as Executive Chef at Cochon Volant.
