Chef Zetina started working for Pazzo's in 1995 under Executive Chef Claudio Brusamolino, a classically trained chef from Northern Italy. The Aiyash family, owners of Pazzo’s, saw potential in Jose and has now trusted in his culinary abilities for over 18 years. Jose has worked with and trained many other chefs at Pazzo's and assisted in opening several new Pazzo's locations. Pazzo's at 311 South Wacker caters to a particular clientle of brides and grooms for their grand occasions. Jose works with our catering manager to customize menus for many nationalities and requests on a weekly basis.
Currently, Chef Zetina is the Executive Sous Chef for both Pazzo's at 23E Jackson and our newest Pazzo's location at 101 North Wacker. Jose is very creative and innovative in preparing his daily specials from his homemade pasta’s down to selecting locally grown produce for all his dishes. A simple Northern Italian pasta dish, he feels, is classic and timeless.
