Executive Chef Jon Keeley brings a breath of fresh air into Gemini Restaurant Group. With a career spanning multiple styles of cuisine across the city, Keeley is an asset with his quick adaptability and extensive knowledge of the industry. Striving to preserve the feel of Gemini Restaurant Group that customers have been so loyal to, Keeley has also reflected on his experience to update the menu. “Gemini Bistro has become a staple for Lincoln Park diners,” Keeley says. “I’m making sure we uphold the classic, homey feel while also introducing some modern ideas and flavors to the menus.”
Keeley thrives in an environment that pushes his creativity and gives him the opportunity to experiment with his style. In order to make this a reality, Keeley mentions that knowing one’s patrons and remaining approachable is key in this development process.
Most recently, he served as a chef de cuisine at Kabocha in Chicago. There, he had the opportunity to experiment with a fusion of contemporary Japanese and French cuisines under the influence of Shin Thompson. Previously, Keeley worked at award-winning Bonsoiree, helping earn the restaurant a Michelin star two years in a row, as well as a three-star review from Phil Vettel at the Chicago Tribune. Before heading to Chicago, Keeley lived in Boston where he worked at James Beard Award winning restaurant Toro.
Keeley developed a passion for food when he was 6 years old. He remembers standing on a stool watching his grandmother make meatballs and helping her by stirring the saucepot. His early childhood experiences with his Irish-Italian background progressed into earning a culinary degree from Le Cordon Bleu in New Hampshire.
When he’s not in his kitchen or venturing into new restaurants, Keeley enjoys riding his bike, enjoying a cold beer and seeing live music around the city.
