Maldonado is one of Morelia´s newcomers, opening his first outlet in 2014 focusing on an organic menu to promote healthy-eating using quality ingredients grown locally as well as organizing workshops on nutrition and healing programs. Being a concept highly-accepted in the community, a second branch the following year.

In September 2015 PANCOUPÉ opened its doors as an artisan bakery using sourdough as the main ingredient and offering a twist of French baking combined with a variety of traditional Mexican recipes; the bakery extended to a Cocina (Kitchen) where their menu still follows the same philosophy of offering healthy dishes based on seasonal ingredients of the region as well as recently introducing a list of beers and cocktails using Mezcal, all produced by local craft distillers.
