Chef Edgar Torres, who is from Toluca, Mexico, began his culinary career at Vinci and Coco Pazzo where he worked as a line cook. Chef Torres then worked with Dudley Nieto for several years at both Zapatista and Zocalo. It was at Zocalo where Edgar began to hone his skills as a chef and develop his own style of cooking-A balance of tradition and innovation that remains true to the complex flavors of Mexico. Chef Edgar Torres has led the kitchen of Taco Joint for the past five years.
