Chef Dan Pancake quite literally lives farm to table as a chef with not only a restaurant that represents his deep culinary background in Mediterranean and Italian cuisines but also a farm in the Ohio River Valley which he owns and operates with his culinary and life partner Beth Partridge. The restaurant also boasts an on site greenhouse and growing beds that keep the seasonal produce flowing uber fresh. His rich culinary experience spans a career with highlights which include helming the kitchen at Café Spiaggia under James Beard Award winner Tony Mantuano, opening Boca Restaurant in Cincinnati under Chef David Falk, as well as living and cooking with Chef Beth Partridge his current partner, for an extended period on the Costa Brava in Spain. His passion for ingredients and his insistence on authenticity and exacting execution are hallmarks of his style . Pancake is an alum of Chicago’s Kendall College and has also studied with the Iowa State Meat Science Extension Program focusing on charcuterie. He brings these many years of experience to his latest effort, Autre Monde a concept developed with longtime industry friends and partners John Aranza & Christine Tully Aranza. The neighborhood restaurant opened in 2011 and has since garnered many accolades including a Michelin Bib Gourmand, Best New Restaurant Award from The Chicago Tribune Dining Awards, Four Stars from Time Out Chicago and Three Stars from both the Chicago Tribune and the Chicago Sun Times and was named one of Chicago Magazines Best New Restaurants in 2012. Chef Pancake spends his down time on his farm in Ohio and travelling the Mediterranean continually honing the authenticity of his craft.
