Longtime Garces Group chef Cory Morris has been appointed to Chef de Cuisine for Rural Society in the new Loews Chicago Hotel located in the heart of Streeterville. Building upon his success in Chef Jose Garces’ Mercat a la Planxa kitchen, he is now at the helm of Garces’ newest concept, an Argentine steakhouse inspired by the parrilla grills widely used in South American cuisine. In addition to Rural Society, Chef Morris will bring his range of culinary and cultural experiences to Loews Chicago Hotel where he will oversee menu development for the hotel’s lobby bar, ETA, its in-room dining options and banquet menus. Chef Morris will continue to bring a Latin influence to these dishes and create an authentic Argentine dining experience with unexpected dishes that fuse local culinary influences with the highest quality of ingredients.
Born in Salt Lake City, Utah, Chef Morris moved to Chicago in 2008 to open Mercat a la Planxa as Sous Chef and was later promoted to Chef de Cuisine of the restaurant. His passion for food was sparked at a young age, and he draws on both childhood memories and global travels to bring a unique and inspired approach to his cooking.
