At age 19, Enyart kicked off his early career working at acclaimed Chef Rick Bayless’s Frontera Grill. Working his way into Managing Chef roles at both Frontera Grill and later Topolobampo, Brian was named the Chef de Cuisine of Topolobampo in 2007, where he oversaw the creative direction of a kitchen team of more than 50 employees. As Chef de Cuisine, Topolobampo became the first restaurant in the Michelin Guide’s 100-year history to earn a star. Chef Bayless took Brian on several trips to Mexico’s most rich culinary destinations including Mexico City, the Yucatan Peninsula, Veracruz, and Oaxaca, which continue to influence his cuisine to this day. Brian has since appeared on Iron Chef America and Top Chef Masters with Bayless, at whose restaurants Enyart met his wife, pastry chef Jennifer Jones Enyart.


Following 15 years alongside Bayless, Brian accepted a position as corporate chef for Lettuce Entertain You Enterprises, developing opening menus for 17 restaurants nationwide. In 2015, Brian and Jennifer joined forces in the kitchen to open Dos Urban Cantina alongside partners Erika Martinez Rotolo and Mike Rotolo in Chicago’s Logan Square neighborhood.


Brian’s cooking has garnered high praise from the Chicago Tribune as “the most important Mexican restaurant to open in Chicago since Topolobampo,” while the Chicago Reader said that Brian and Jennifer are “taking Mexican food to places it’s never been before.”
