Girl and the Goat
Aaron Thebault discovered his love for food in high school after making the decision to switch out of a computer class and try his hand at a culinary arts course. That class led him to pursue a career in food and attend the Illinois Institute of Art in Chicago to study Culinary Arts. He’s been cooking ever since.
Before joining the opening team at Girl & the Goat, Aaron worked at Landmark, BOKA, MK the restaurant, and The Cellar in St. Thomas, USVI. When the BOKA Group announced the opening of the soon-to-be West Loop hotspot with Chef Stephanie Izard, Aaron jumped at the opportunity to be a part of something he knew would be exciting. He joined the opening team, worked his way through the line to sous chef, and was named Chef de Cuisine in 2013.
Aaron lives by the phrase, “if you’re gonna talk about it, be about it,” something he demonstrates daily in the kitchen. He enjoys the fast pace and high volume that working at Girl & the Goat provides, and challenges himself and his staff to create memorable guest experiences every single day. His hard work and dedication were recognized by Zagat in 2013 when he was included in their highly coveted “30 Under 30” list.
When Aaron isn’t working, you can find him drinking a Highlife and catching a Cubs or Blackhawks game. He also enjoys eating at the many awesome restaurants in Chicago; some of his favorite spots include Nightwood, Two, and Carriage House.
