A native of the Netherlands, Chef Hetty moved to the United States with her family when she was thirteen. With her ardor for desserts and pastries, Chef Hetty attended the Midwest Culinary Institute, specializing in plated desserts, breads, and specialty cakes. She graduated at the top of her class with a degree in Pastry Arts. Shortly thereafter, Chef Hetty accepted a pastry position at the 3 Michelin starred Eleven Madison Park in New York City. As a member of their pastry team, Chef Hetty was exposed to some of the finest desserts in the United States, working for the 10th best restaurant in the world at that time. In 2010 Chef Hetty moved to Chicago and worked at the acclaimed Four Seasons Hotel Chicago, continuing her craft with the pastry team at Seasons Restaurant. In 2012, Chef Hetty joined River North’s Untitled restaurant as Pastry Chef, creating classic American desserts with her distinct refinement and clean flavor profiles, garnering a Michelin Bib Gourmand in Untitled’s first 6 months of opening. With a blank canvas and creative freedom, Chef Hetty is pleased to join Executive Chef Lawrence Letrero as Pastry Chef at The Refinery. Chef Hetty will feature a detailed plated dessert menu, an artisanal bread program, as well as an intriguing assortment of hand crafted candies. Under the concept and philosophy of The Refinery, Chef Hetty works closely with Executive Chef Lawrence Letrero to create a pastry program that flows seamlessly with the savory program offering guests a complete culinary experience from start to finish.
