Michael "Wally" Wallach

Born and raised in Chicago, Michael Wallach, Park Grill's Executive Chef, is a graduate of the Culinary Institute of America in Hyde Park, New York. Michael has been cooking for 20+ years starting his career at the Restaurant Gasthaus Zum Hecht in Switzerland. Upon returning to Chicago, Michael worked for 6+ years at Weber Grill where he rose up to Executive Chef. His passion for food then took him to Executive Chef positions at Carlucci's, The Clubhouse and Nick’s Fishmarket (where he rose to Corporate Executive Chef), the Millennium Knickerbocker Hotel, and Blue Chip Casino and Spa. Most recently Michael has been the Executive Chef at McCormick and Schmick's in downtown Chicago.
Michael has a strong passion for fresh and seasonal ingredients and for creating imaginative and innovative dishes. He has a straight forward approach to food with a rustic soul. The uniqueness of Park Grill and its' diverse culinary outlets provide great platforms for Chef Michael Wallach to demonstrate his exceptional talent.
