One North Kitchen & Bar

Will Pagulayan puts his creative talents to good use as Executive Chef at One North Kitchen & Bar. Chef Will attended Western Illinois University and graduated with a B.A. in Graphic Design and a minor in Marketing. After a few years, Chef Will not only realized that he was happiest in the kitchen, but also that cooking brought back memories of cooking at home with his dad. Will then decided to enroll at Kendall College in Chicago IL.


After two years at Kendall, Chef Will had the opportunity to work in France and stage for Hyatt Hotels in Paris. Every weekend Will would try to stage at different restaurants, from Michel Bras, to L’Atelier de Joel Robuchon Paris, and other Michelin starred restaurants.


After returning to Chicago in 2007, Chef Will had the opportunity to work with the famous Chef Graham Elliot Bowles of Graham Elliot. From there he continued to develop his culinary skills with Chef Michael McDonald at One SixtyBlue. After a year at One SixtyBlue, Chef Will went on to become the Sous Chef at Evanston’s Bistro Bordeaux under Chef Frank Mnuk.


Today Chef Will leads the kitchen at One North Kitchen & Bar on Wacker Drive across from the Chicago Lyric Opera. “I like to make things really simple but flavorful. I like to try new things with whatever is fresh and available. I will always be thankful to all the Chefs that I’ve worked with in the past because without them I would not be where I am today.”
