The Drawing Room
Chef Nick Lacasse, born in Vermont, has worked his way over a fifteen year period from humble beginnings as dishwasher to nationally acclaimed Executive Chef of The Drawing Room. Armed with a solid foundation from the New England Culinary Institute, Chef Nick moved to Seattle at age 18 to work in the very European disciplined kitchen of Jan de Boer. His talent and creativity was instantly apparent to those around him as he begin to develop his own style working under numerous James Beard award winners including Chicago’s own Shawn McClain. When given the opportunity to lead his own kitchen he accepted the position at the Drawing Room. The Drawing Room has become known for the intimate dining experience offered in its hidden subterranean location. Chef Nick creates a seasonally inspired menu with global influences and a focus on textural contrast. In 2012 Chef Lacasse competes among other chefs in the Bravo Network challenge 80 Plates Around the World.
