Schmidt comes directly from CanoeBay, a Wisconsin resort, and previous to that has an impressive history at some of Chicago’s finest restaurants, including Blackbird, Everest and Trio. In 2004, following Trio and Everest, and before Blackbird, Chef Tony worked for a year at Azul in Miami, FL. The chef believes his rewards and achievements are having had the opportunity to work alongside some of the best chefs in the world.
Pierrot Gourmet is located on the street level of The Peninsula Chicago at 108 East Superior Street, at the corner of Rush and Superior Streets. Signature items include tartines, flambées, a variety of rotisserie chicken options, home-made soups and salads, French pastries, numerous to-go selections, and eclectic wines served in a country home setting.
