Mike Hernandez


Executive Chef Mike Hernandez was born in Long Island and raised in Florida. Hernandez started cooking at a young age with his 97 year old grandmother, Sicilian mother and Puerto Rican father. Inspired by their Italian-Spanish family meals, Hernandez chose to pursue a career in the culinary field. At 15 years old,  he started working in the kitchen at a family pizza parlor, and went on to serve as a cook at Macaroni Grill (Orlando), reaching executive chef status by the age of 25. He then moved to a three-year sous chef position with Brio Italian Grill (Orlando), followed by a six year stint with P.F. Chang's (Orlando, San Destin) in both front and back of the house roles in management and as executive chef. Prior to joining ZED451 in Chicago, Hernandez was with John Rivers’ Texas-inspired 4 Rivers Smokehouse. Chef Hernandez is excited to be a part of Chicago's bustling culinary scene and, in his spare time, enjoys practicing martial arts and CrossFit.
